Cakes suitable for long journeys

Hello everybody!

While traveling you certainly think about sweets and cakes a lot. I do that, too. You should buy something on BP, of course, but sometimes you have a strange feeling to eat something homemade and soft and…yummy. Because not all cakes are suitable for traveling and especially long journeys (stuffing, adornment, can sour etc.), this article is dedicated to long lasting and amazing and tasty cakes you can easily do at home – and even not for so long. I tried all these recipes during Christmas holidays and all of them are really really delicious.

Bundt cake

Pros: long lasting, every pice will fill you, dry cake

Cons: crumbles away and you have to eat it over a plate

  • 120g of butter
  • 250g of powdered sugar
  • 300g of flour
  • 30g of raisins
  • 3 large eggs
  • 200ml of milk
  • 1 baking powder
  • peel from one medium lemon
  • 100g of chopped chocoalte (one whole package)
  • 50g of chopped walnuts

Mix the butter with sugar , gradually add milk, flour, baking powder, lemon peel, raisins, chocolate. Then blend the eggs with hand mixer in separate bowl into a measure what looks like snow. To know whether you did it right, flip over the bowl you have done it in and when it doesn´t fall and stays on its place, it´s right. After mixing all ingredients together pour dough to buttered and flour sprinkled form. Bake at 200°C for one hour. Then, after it cools down flip the form and sprinkle the cake with powdered sugar. I recommend doing that with mixer/robot.

Pros: you doesn´t need to chop it because all is in one piece wrapped in paper and then you should trash that paper, long lasting, dry cake

Cons: sometimes decored with some icing that should last less – so icing in one of that recipes is only optional

Nutella muffins

  • 50g of hazelnuts
  • 100g of flour
  • 25g of cocoa
  • 50g of Nutella
  • 1 baking powder
  • pinch of salt
  • 125g of powdered sugar
  • 140g of butter
  • 2 large eggs
  • 20ml of milk
  • 1 vanilla sugar

For cream (optional):

  • 100g of butter
  • 150g of Nutella
  • 225g of powdered sugar
  • 30ml of milk

For decorations:

  • without cream: Nutella and hazelnuts
  • with cream: hazelnuts

Mix sugar and both eggs until all lumps disappear. Put butter into the microwave in other bowl for few seconds and add it to the mixture. In another bowl mix flour, cocoa, baking powder, salt and crushed hazelnuts. You can either buy crushed or smash them on your own at home. Slowly add with one tablespoon to ,,wet mixture” all dry ingrendients. And then, while mixing add gradually milk and vanilla sugar. Fill up the forms and cook on 170°C for 20-22 minutes. I recommend mixing all those ingrendients with mixer or robot.

For cream: While mixing add gradually by one tablespoon Nutella to the butter. When it´s brown, add slowly gradually sugar and mix it until all the lumps disappear. At the end add milk and mix again. You can put it on your muffins (they have to be cold or cool!!) with devices designed for this purpose or when you do a hole at the tip of small plastic bag. As for the decoration on this cream put few almonds up and you´re done.

It fills up about 12-14 forms.

Please try not to notice that text. I didn´t take a photo of them and I just screenshotted what my friend took. So sorry for that.

Blueberry muffins

  • 160g of flour
  • 165g of sugar
  • 250g of blueberries (frozen or fresh)
  • 1/2 of baking powder
  • 1 large egg
  • 190ml of milk
  • 85ml of oil

Mix flour, sugar and baking powder. Gradually add egg, milk and oil and mix the whole mixture. Blueberries add at the end and only barely mix – because then will your dough be purple. Fill up the forms and bake on 200°C for 20-30 minutes – until they are swollen, gold-brown an a little cracked at the top. This can be easily done without robot/mixer.

It fills up 24 forms.

You should all your cakes put into the box and then when you will be hungry, just put one up and fastly and simply eat 🙂

Okay, I hope you will like these cakes and use them for your travels. Have a good meal!
